5 Mickey Mouse Cake Ideas

If you ask me which is the most popular child character for cakes, without a doubt my answer would be Mickey Mouse!!

I think that Mickey Mouse’s magic to connect so well with children it’s because his sweetness and sympathy.

I remember my son, who since was a baby, enjoyed a lot Mickey’s cartoons and still to this day the Mickey Mouse Club House is the official program of Saturdays morning.

Yesterday I made a Mickey Mouse cake that I will be sharing with you soon, and I have another one in agenda.

So after seeing the popularity of both Mickey and Minnie Mouse cakes I want to share with you 5 cake ideas that can be used as inspiration for your next thematic party.

There’s a lot of things that can be done with Mickey Mouse so here you have a few examples:


I made this cake a couple of years ago for Omar’s second birthday party and still one of my favorites, it’s colorful and fun and what makes it more special is the emblematic Mickey Mouse hat that has as a topper.

This beautiful cake features as a topper the famous Minnie Mouse ears and bow, also the color combination is simply spectacular.

I made this extraordinary cake for Icing Smiles, an institution to which I’ll dedicate a post to talk exclusively about it.

In this cake we can see Mickey along with his best friend Pluto, but the most important thing about this cake is the logo in the shape of a heart in front, that represents the cause for which this cake was made.


This is another cake that I made long time ago, I love it because of the modern feeling that the zebra print adds to the design.


This is a very special cake for me because it was made for my son’s second birthday party.

This cake has a very unique colors combination and the stars around put this cake in another level.

Best Ever Cream Cheese Frosting

Hello everybody!!

Today I bring you a recipe perfect for those ,who like me, are cheese lovers: the best ever Cream Cheese frosting.

This Cream Cheese frosting is simply delicious, I love it because you can feel pretty well the cheese flavor and also is not extremely sweet.

Another advantage of this Cream Cheese frosting is that it holds its shape very well and that’s why it’s ideal for pipping cakes and cupcakes.

The recipe that I sharing today, is the basic Cream Cheese frosting recipe but we can transform it by making minimal changes that I will tell you at the end of this post.

Also, I’ll tell you what type of cake I like to combine with the different Cream Cheese frosting variations, so write down this recipe and don’t lose any detail.





  • Beat cream cheese and butter until mix, add vanilla and combine.
  • Add sugar one cup at a time.
  • DON’T OVER BEAT or frosting will be too soft.

For this occasion I combine this Cream Cheese frosting with Red Velvet Cupcakes.

This one is also my favorite to combine with Carrot Cake or Banana Bread.


  • If you want to make a Cream Cheese Maple frosting cut vanilla to 1/2 teaspoon and add 1 tablespoon of Pure Maple Syrup.

This frosting is perfect for Pumpkin Pie Cupcakes.

  • For a Cream Cheese Lemon frosting substitute vanilla for 2 tablespoon lemon juice and add some lemon zest (optional).

I like to combine this frosting with Lemon Cake or Strawberry Cake.

  •  To make Chocolate Cream Cheese Frosting just add 1/2 cup of unsweetened cocoa.

This one goes perfect with Chocolate Cake, White Cake or Marble Cake.

These are some suggestions but of course you can combine it any way you want, the rules are set by you!!!

Easter Drip Cake and Ombre Tutorial

Hello everybody!!

Today I want to share with you the nice story behind this beautiful Easter Drip Cake.

When it comes to making cakes or desserts for my son’s school activities, I always forget it..and this cake was not the exception!!

Yesterday my son and me, spent the day doing Easter activities, I took him to the park for egg hunting and then we had a delicious picnic with other moms and their children and we were talking all the time about Easter plans.

And although the whole atmosphere shouts Easter, it was last night that I remember that today was my son’s Easter party at school!!

The same thing happened to me on Brownie’s day, you can read about it and find the brownie’s recipe clicking here.

So without wasting time, I jumped out of the chair and started to prepare one of the fastest cakes that I’ve  ever made, luckily I already had the ingredients at home and it was just baking and decorating.

For this Easter Cake I wanted to make something special and colorful for the kids, so I decided to make a drip cake with a lot of sprinkles outside and for the inside I used an Ombre technique.

At the end of this post you’ll find a detailed explanation plus a picture, about how to make an Ombre Cake but first some details about this gorgeous Easter Drip Cake:

  • This is  8″  cake filled with strawberry jam and iced with buttercream.
  • The drip was made using white chocolate ganache colored in light pink.
  • It was decorated with Easter sprinkles and lollipops.
  • For the swirls on top I used this tip.


Ombre Cakes are colorful cakes where he colors used are graduated from light to dark (google def.)

To make this Ombre cake, I first made a white cake using this recipe from Edna de la Cruz.

With the completely white batter I filled half of a 8″ mold, previously prepared.

To the rest of the white batter I added a drop of red food coloring, then I mixed until obtain a light pink color and filled half of another 8″ mold, previously prepared.

To the rest of the light pink batter I added 5 more drops of red food coloring, then I mixed until obtain a dark intense pink color and filled half of another 8″ mold, previously prepared.

In this picture you can see the difference of colors in the molds before being taken to the oven:

At the time of assembling the cake and to achieve the Ombre effect I put the darkest layer at the bottom, the light pink layer at the middle and the white layer at the top.

Please, don’t be intimidated by this technique, it’s very easy to make and the final result is simply fabulous!!

Little Monkey Birthday Cake

Hello everybody!!

If I had to choose one word to describe this Little Monkey Birthday Cake, the word would be: HAPPY!!

I made this cake some time ago, but seeing it still produces on me a feeling of happiness..perhaps is the beautiful combination of colors or maybe because of the little monkey that was placed as a topper.

This Little Monkey Birthday Cake was made for Andre, a little boy who at the age of two was fascinated by monkeys and his favorite cartoons, toys and clothes had to have a monkey as a theme.

I remember that when they asked me to make this cake, they request something cheerful and funny, they also wanted something big because they had a lot of guests and the most important thing was to put a monkey on top, just like the birthday boy wanted.

And precisely that little monkey, was the detail that had me more excited about this cake because I could practice with my carving and figures modeling..the monkey was done completely by hand using gumpaste and without the use of any mold, it was completely edible but also could be kept as a souvenir maintaining a proper care.

More details about this cake:

  • It’s a 3 tier 6″, 8″ and 10″ vanilla cake filled with Dulce de Leche and iced with buttercream.
  • It was completely covered and decorated with homemade marshmallow fondant.
  • The little monkey was made with mixing brown fondant and tylose powder.
  • The name and number was made using these fondant cutters.
  • For the ribbons on the second tier, I used this cutter.

All the details of this cake indicate joy and fun..the colors, the borders made out of fondant balls and the stars that stand out making this cake more spectacular, without a doubt this is one of my favorite cakes.

To finish, I want to encourage you to put into practice all your skills, if something does not work out as you wish in the first attempt just keep trying!!!

I was pleased with my little monkey on my fourth attempt and I think it was worth because Andre love it!!! So please, don’t get discouraged, with practice and patience you can achieve all your goals and the satisfaction of making the effort will be the greatest reward.

Elephant Baby Shower Cake

Hello everybody!!

I’m literally in love with this gorgeous Elephant Baby Shower cake!!!

I really like the tendency of making big and fancy baby shower parties to celebrate the arrival of a new member of the family because there is not greater reason for joy than receiving the blessing of a baby and for me that must be celebrated with style.

And this beautiful elephant cake is the perfect example of what it is to celebrate a baby shower with elegance and style…from the moment I was asked to make this cake I knew it was going to be one of my favorites because of the delicate combination of colors and its exquisite details, I was really excited !!

This cake was huge, the purpose was to make it for an average of 100 guests so it had to be a big cake with details that would stand out, and that’s why we placed on the side, a larger than normal bow which, by the way, looked great on the cake.

Another detail that I loved about this cake, was the funny little blue elephant that was used as a topper..the ear in the shape of a heart and the balloon in its trunk give to this elephant a lovely and sweet touch, perfect for celebrate the arrival of a baby.

More details about this wonderful cake:

  • It’s a 3 tier 6″, 8″ and 10″ vanilla cake filled with Dulce de Leche and Pineapple jam and iced with buttercream.
  • It was completely covered and decorated with homemade marshmallow fondant.
  • The elephant was made using a template that I printed from my computer.
  • The chevron pattern from the top tier was made using this cutter.
  • For the borders I used my favorite silicone mold.
  • For the letters I used this fondant cutters.
  • The circles on the bottom tier were made using round cookie cutters.

And here’s a close-up picture of the  cute elephant and the huge bow:

Let me tell you something, this Elephant Baby Shower cake took my breath was gorgeous, pure perfection!!

As you can imagine, the cake was the center of attention of the baby shower party, totally success..and also it was more than enough for the numbers of guests attending to the celebration.

Sincerely, I feel more than grateful to be able to do what I love, each cake has a different story and a different experience but what they all have in common is that I make them with the same love and dedication..that’s a pleasure for me!!

Solar System Cake

Hello Everybody!!

Today I not only want to share with you this beautiful Solar System cake and his details..I also want to share the mixture of nostalgia and joy that I got from doing it.

A few years ago I had the pleasure of making Omar’s first birthday cake, for that occasion his parents decided to make a beautiful cake with a monkey theme, then for his second birthday we made another beautiful cake with Mickey Mouse theme, also decision from his parents.

But the time has passed and Omar, thanks God, turned 6 years Old ..but unlike the first years, on this occasion the theme of the cake, with all its details was chosen by the birthday boy himself!!!

And here is when I begin to feel that mixture of nostalgia and joy that I mention before..nostalgia because we see how fast our children grow and how they begin to make their own decisions, how they become independent human beings, with criteria and well-defined tastes, they need us less!!..and I am living the same thing with my own son, who when he turned 4 decided that he wanted a Sponge Bob Cake (not my favorite cartoon), you can read the story here.

But these at the same time, are the same reasons that make me feel happy and grateful, to see how our children grow and develop not also in stature but also in intelligence.

And now, after drying my tears a bit, some details about this funny Solar System Cake:

  • This is a 8″ vanilla cake filled with chocolate and iced with buttercream.
  • It was covered and decorated with homemade marshmallow fondant except for the red fondant which was prefabricated.
  • The rocket and planets were made free hand.
  • To achieve the Navy Blue fondant I mixed  royal blue fondant with a little bit of black fondant.

The birthday boy was very specific when he request the shade of blue he wanted for his cake, nothing light blue because he is no longer a baby!!

For me it was very satisfying to know that Omar loved his cake and that his interest for planets and solar system was reflected in his birthday party…let’s see what theme will be for next year’s cake LOL

Tous Baby Shower Cake

Hello everybody!!

I still don’t know the first woman who’s not a jewelry can be a simple or elaborate jewel, each woman has her preference and the truth is that jewels has become part of the feminine daily attire.

Some women, including me,  feel so identified with a particular brand, that we not only use their jewelry, but also we use our  favorite brand accessories and clothing and little by little we become so fanatical that our favorite brand becomes part of our identity.

But something that seemed very surprising and fun at the same time to me, was when I was asked to make a baby shower cake with the favorite  jewel brand of the mommy to be: a Tous Baby Shower Cake!!

I particularly love Tous jewelry because they are simple but at the same time very elegant, and so is this cake, a very simple, clean and elegant design, where the elements that stand out are two beautiful big fondant flowers and of course, the emblematic teddy bear that represents the Tous brand.

At the end of this post, you will find a link for the tutorial about how to make big flowers on fondant but first some details about this extremely beautiful cake:

  • It’s a two tier 8″ and 10″  vanilla cake, both of them filled with Dulce de Leche and iced with buttercream.
  • It was completely covered and decorated with homemade marshmallow fondant.
  • The letters on the cake board where made using this silicone mold.
  • The teddy bears were handmade using a template that I printed from my computer.
  • The borders were made using this blue silicone mold, one of my favorites.

This cake is the perfect example that in may times less is more, and that we don’t need to saturate a design with exaggerated decorations to achieve an exquisite and elegant result.

I was very pleased with the final product but the most important thing was that the future mom loved it and could make a reality the cake she visualized for her baby shower, with her favorite brand jewel theme.

Batman-Lego Cake

Hello everybody!!

At the time of making a cake, I put the same love and interest to all of them..each one represents  a reason of joy for me and thinking about the final product gives me a lot of emotion but without a doubt there are some cakes that make me feel a special sensation, and that is the case of the Superhero Cakes.

I don’t know if it’s that the birthday boys give me the same emotion they feel for their favorite superhero, but making these cakes always turns out to be a lot of fun and this Batman-Lego cake was not the exception.

Making this cake was not only fun but it was very easy to make, because the birthday boy already had very clear what he wanted so It was only bringing to life the combination of Batman and Lego that he had chosen for his cake.

Something else he had asked, and the most important thing to him, was that although at home they call him Emmy, the cake displayed his full name, which is Emmanuel, so we fulfilled his wish just as he asked.

Details about this super cool cake:

  • It’s a two tier cake 6″ and 8″ cake, the top is chocolate cake and the bottom is vanilla, both of them filled with Dulce de Leche and iced with buttercream.
  • The cake was covered and decorated with homemade marshmallow fondant except for the black fondant which was prefabricated.
  • For the name I used these cutters.
  • For the Batman logo I used a template that I printed from my computer.

When I went to deliver the cake, Emmy opened the door and his face was amazing when he saw his birthday cake, then he said Thank You and gave me a big hug…I melted!! LOL
