Little Penguins Birthday Cake

Hello everybody!!

I want to start saying something that I’ve been repeating for more than a month: I’M COLD!!!!

Although here in Florida the cold has not been as intense as in other parts of the country, it is surprising how low the temperatures have come in this state, that is characterized by its warm and tropical climate.

But for me, the most surprising thing, was to leave the house early in the morning and see the roof of the car  completely covered with ice..I could not believe it!!! Maybe for many of you this is something very natural but for me, a Dominican girl who lives in Florida, this is something impressed me a lot.

But another thing that impresses me and also makes me laugh a lot, is to see everyone (including me) using those heavy black coats, which are ideal to be used in the snow..everybody looks the same and the only thing that comes to my mind is that with this outfit we all look like a bunch of penguins LOL

And this is why I want to share with you this Little Penguin Birthday Cake, this is one of my favorites cakes ever and although I made it a while ago, it fits perfectly with this cold season.

Details about this cake:

  • This is a 8″ vanilla cake filled and iced with vanilla buttercream.
  • It was covered and decorated with homemade marshmallow fondant except for the black and red fondant which were prefabricated.
  • The snowflakes were made using these fondant cutters.
  • The name was made using this Martha Stewart silicone mold, which by the way, is one of my favorites.
  • The silver color of the snowflakes and the letters was achieved using gray fondant and then painted silver with this spray.
  • The penguin figurines were handmade using gumpaste (fondant + tylose powder)

I sincerely hope that this cold weather ends quickly because to be honest, it’s not my favorite..but if you are one of those people who likes it and doesn’t feel uncomfortable with it, just enjoy it to the fullest before the heat arrives!!

A Gym Cake for New Year’s Resolutions

Hello everybody!!

With the arrival of January,  the famous New Year’s resolutions also arrive..some promise to go more to church, others to have a more positive attitude but without a doubt the most popular resolution of all is to eat healthy and start the gym!!

When the holiday season begins, from Thanksgiving day until New Year, the diet is forgotten and with the celebrations excesses come and of course a few more pounds…the worst is when we get on the scale and see the cruel reality and the consequences of this wonderful season.

Like most of the people, one of my new year’s resolutions is to start a healthy diet and exercise more and that is why today I share with you this cake inspired by the Gym.

Although this cake was made last August, I think the theme fits perfectly to the desire of many of us to have a healthier lifestyle, besides this particular cake was made for a person who achieved a radical change in his life thanks to diet and exercise so without wasting time here are some details about this original cake:

  • This is an 8″ vanilla cake filled with Dulce de Leche and Pineapple jam and iced with buttercream.
  • The cake was covered and decorated with homemade marshmallow fondant except for the black and  red fondant which were prefabricated.
  • The gym bag was handmade out of fondant and the weights were made using round fondant cutters and placing silver candles in the middle to give a more realistic appearance.
  • The numbers and letters were made using these cutters.
  • For the borders I used my favorite silicone mold ever.

And that’s all for now, I sincerely hope that you can meet all your new year’s resolutions..I think the key is to have consistency and patience to see the results so no matter what our resolution is, we need to be positive and focus on what we are trying to achieve..WE CAN DO IT!!!

Minnie Mouse Birthday Cake

Hello everybody!!

Happy New Year!! I wish you a 2018 full of health, happiness and plenty of blessings  in your lives!!

In this opportunity I want to share with you one of the last cakes I made last year with a theme that  makes me feel really excited every time I have the chance to do it: a Minnie Mouse Cake.

Definitely for me, Mickey or Minnie Mouse cakes are one of my favorites, if you visit my Facebook page you will realize the variety of cakes I have made using this topic and even my son’s second birthday cake was made with the Mickey Mouse theme, so making this cake almost finishing the year was a real pleasure to me.

Here are some details about this simple but extremely beautiful cake:

  • It’s a two tier 6″ and 8″ cake, the top is vanilla cake and the bottom is chocolate, both of them filled with Dulce de Leche and iced with buttercream.
  • The cake was covered and decorated with  homemade marshmallow fondant except for the black and red fondant which were prefabricated.
  • The Minnie Mouse silhouette was made using  these cookie cutters and the little bows were made using these Martha Stewart Silicone Molds.
  • The number 4 was made using these FMM funky letter fondant cutters.
  • The Happy Birthday sign and name on the cake board were made using the Wilton Alphabet and Numbers Fondant Cut-Outs set that you can find here.
  • For the Polka dots I used a small round cutter.

The birthday girl was completely happy with her cake, when she saw it she gave me a big and tender hug ,then she thanked me for making her beautiful cake.

To see people’s happy faces, specially kids, when they see their cakes is the greatest satisfaction I can receive, and when I share it with you I hope it serves as an inspiration and encouragement to make your own creations..may this be one of your new year’s resolutions!!

Christmas Drip Cake

Hello everybody!!

Christmas season, without a doubt, means to break the diet and eat a lot..there are always many invitations to eat or a plan at home to have a get together with family or friends that we want to please with a good meal and of course with a not only delicious but also a beautiful dessert.

For this occasion I bring you a brilliant idea that you can use to surprise the hosts when you have a dinner invitation or you can use it for your dessert table when the party is at home: A Christmas Drip Cake.

I love this cake so much because in this one we combine Christmas with one of the most trendy cake decoration techniques which is the Drip cake..it was my second attempt using this technique and although I was very pleased with the final result, I think next time I will make a little change that I’ll explain later on this post, but first some details about this cake:

  • It’s a 6′ round vanilla cake tinted with green food coloring to make the cake look more attractive.
  • To make the cake even more tasty and flavorful according with the season it was filled and frosted with my Peppermint Buttercream frosting, you can find the recipe clicking here.
  • For the decoration I used crushed candy canes, these sprinkles and these icing decorations.

And now the most interesting and fun part, the Drip technique:

-I used a 2:1 ratio of Red Candy Melts and heavy whipping cream, the candy melts on the microwave in 30 second periods, after melting completely I added the heavy cream to make a kind of candy melt “ganache”, then I let it sit for one hour.
-With the help  of a squeeze bottle I drip the “ganache” all around the top edge of the cake that was already filled, frosted and chilled.

For me the drips were too long, I would have liked to see drips that were more in the middle of the cake and I think that happened because the consistency of the candy melt ganache was still very loose, even though I had left it to rest for an hour.

Next time what I’m going to do is decrease the ratio of heavy cream and instead of using a cup I’m just going to use half a cup of heavy cream, but as I said before I was very satisfied with the result and also everyone loved the cake which is the most important thing.

3- Ingredient Brownies

Hello Everybody!!

After two really busy weeks of making cakes I’m back and this time I bring you the easiest and  most delicious Brownies recipe.

Last Friday my son had a Brownie day at school, he was very excited because… what child does not like chocolate and brownies?..he kept remembering it all the time and I don’t know why but I completely forgot it and it wasn’t until Thursday night when he mentioned it to me that I remembered that Brownie day was the next day…OMG!!

I thought about how sad my little prince would be if he didn’t go to his school with the brownies that he had mentioned so much and suddenly came to my mind the most faster, easiest and most delicious recipe that I have done in my hole life: the 3-Ingredient Brownies.

This recipe is extremely easy to make, it is foolproof!! There is no way to go wrong with it and it’s also so fast to make that we can make it on any occasion in which we want to please someone with a dessert made with our own hands…so without wasting any more time here you have the recipe:

                                                               3-INGREDIENT BROWNIES

  • 1 1/4 CUPS NUTELLA
  • 1/2 CUP FLOUR
  • 2 LARGE EGGS

PREPARATION:

-Preheat your oven  to 350 degrees F. Spray your pan with nonstick cooking spray.

-Mix all the ingredients with a hand mixer. Bake 15-20 minutes. Let cool and then cut into squares.

To make these Brownies more colorful and according with Christmas season I put some  icing decoration on top from this set.

Dear friends, I don’t have enough words to describe how delicious these Brownies are, they are slightly crispy on the outside but moist and gooey on the inside..the only thing I can say is that I am sure that you will love them and I know for sure this recipe will be one of the favorites of your collection.

Christmas Peppermint Cupcakes

Hello everybody!!

The most beautiful time of the year has arrived, officially Christmas is here!!

Christmas is all exciting.. decorating the house and the Christmas tree, shopping and planning the Christmas dinner which has to end of course with a delicious dessert.

And since we mentioned desserts on this occasion I want to share with you a dessert made from the candy that without a doubt better represents Christmas: Peppermint Candy Canes.

These Christmas Peppermint Cupcakes are tasty and refreshing, not only are they topped with a delicious buttercream with a peppermint flavor but also we added the surprise factor by filling them with a rich Hershey’s Kisses Candy Cane.

Later in this post you will be able to find the recipe to make the Peppermint Buttercream but first let me show you the process of making these cupcakes.

  • Bake your favorite flavor cupcakes, this time I made White Vanilla cupcakes but I’m sure that in combination with Chocolate cupcakes, this recipe would be great.
  • I used Christmas themed baking cups to give them an appearance more in line with the theme but you can use white plain baking cups and they still going to look really good.
  • Hollow the center of your cupcakes, I used a cupcake corer but you can use a knife.
  • Fill with one Hershey’s Kisses Candy Cane.
  • Frost your cupcake with the Peppermint Buttercream, to achieve this swirl I used Wilton 1M tip.
  • To finish your decoration add crushed Candy Canes.

                                                   PEPPERMINT BUTTERCREAM FROSTING

  • 1 STICK UNSALTED BUTTER ROOM TEMPERATURE
  • 1 CUP SHORTENING
  • 3 TEASPOONS PEPPERMINT EXTRACT
  • 4 CUPS POWDERED SUGAR
  • 2 TABLESPOON MILK OR HEAVY CREAM (IF NEEDED)

PREPARATION:

-Mix all the ingredients one by one with a hand mixer. If the consistency is too thick add milk or heavy cream.         Frost your cupcakes.

Please, don’t let this season go without making these Christmas Peppermint cupcakes..they are easy, delicious and ideal for these celebrations..I know you will love them as much as I did, they were the perfect excuse to break the diet!!! LOL

A Lovely Autumn Cake

Hello everybody!!

Simple but elegant and delicate are the words I would use to describe this lovely Autumn Cake.

When I was asked to make this cake, they asked for a “neutral” decoration..for them the most important thing was to eat a good cake so they left the decoration to my criteria and I decided to do something according with the season and not very complicated.

As I was asked for something neutral I did not want to use very strong or very bright colors and what I did was to add a big flower as a topper to be the center of attention of the cake.

The cake was just beautiful, here I share some details:

  • It’s an 8″ almond cake filled with pineapple jam , Nutella and buttercream icing, this combination of flavors is to die for..delicious!!
  • The cake is covered and decorated with homemade marshmallows fondant except for the brown fondant which was prefabricated.
  • For the decoration I used these light green dragees.
  • The diamond design was made using this tool.
  • For the border I used my favorite silicone mold.

This is a lovely Autumn Cake, i love it because it’s an easy and quick decoration to make, if you change the colors it adapts to any occasion or season and the detail of the big flower makes it look very elegant, so I assure you that in the future you will see more cakes like this one around here.

My Favorite Thanksgiving Cake

Hello everybody!!

Definitely Thanksgiving day is one of my favorite days of the year, it is a special occasion in which the family gathers to thank God for his kindness and blessings.

Part of the Thanksgiving tradition is to make a delicious dinner where among all the succulent dishes that are prepared, the turkey is undoubtedly the star of the night.

When I was asked to make a Thanksgiving cake, the first thing that came to my mind was to make something elegant according to the celebration and add as a cake topper the most representative element of the Thanksgiving dinner, the Turkey…also I wanted to give him a funny touch by making the cute turkey hold a sign that said “Eat Beef” LOL

Here you have my favorite Thanksgiving Cake:

Some details about this beautiful cake:

  • The top tier is an 8″ and the bottom tier a 10″ both of them vanilla cake filled with Dulce de Leche and buttercream icing.
  • The cake is covered and decorated with marshmallows homemade fondant except for the brown and red which were prefabricated.
  • The diamond design was made using this tool.
  • For the decoration I used these gold dragees.
  • The flowers were made using cutters from this set.
  • The turkey was handmade using gumpaste (fondant + tylose powder)
  • For the letters I used this wonderful Martha Stewart silicone mold.
  • For the borders I used my favorite silicone mold ever.

And here you have a close-up of the turkey:

Everyone loved the cake but the turkey was the center of attention of the dinner, the hostess of the party liked it so much that she kept it as a souvenir!!

It only remains for me to wish you a happy Thanksgiving, and don’t forget to give thanks to the  Lord for his love and blessings not only this day but every day.

Pumpkin Pie Cupcakes with Cream Cheese Maple Frosting

Hello Everybody!!

I don’t know if it happens to you but when November arrives I feel immediately  the spirit of the Holiday season.

I love to see how the atmosphere transforms with autumn and harvest themes everywhere and how families begin to prepare for one of my favorite Holidays: Thanksgiving Day.

It is for this reason that today I bring you a very appropriate dessert for this season that also could be the perfect complement for your Thanksgiving dinner, I’m talking about these delicious Pumpkin Pie Cupcakes with Cream Cheese Maple Frosting.

These cupcakes are  really tasty, they have a moist and smooth texture and the best of all is that they are very quick and easy to make so without wasting time here you have the recipe.

                                                                      PUMPKIN PIE CUPCAKES

INGREDIENTS:

  • 1 1/2 CUP ALL PURPOSE FLOUR
  • 1 TEASPOON BAKING POWDER
  • 1/4 TEASPOON BAKING SODA
  • 1 TEASPOON PUMPKIN PIE SPICE
  • 1/2 TEASPOON CINNAMON
  • 1/2 TEASPOON SALT
  • 1 CUP PUMPKIN 100% PURE PUREE
  • 1/2 CUP VEGETABLE OIL
  • 1/2 CUP LIGHT BROWN SUGAR
  • 1/4 CUP GRANULATED SUGAR
  • 2 LARGE EGGS
  • 1 TEASPOON VANILLA

PREPARATION:

-Preheat your oven at 350 gr F. Mix flour, baking powder, baking soda, pumpkin pie spice, cinnamon and salt. In a separate bowl mix pumpkin puree, oil, sugars, eggs and vanilla. Mix wet and dry ingredients. Fill your baking cups halfway. Bake 20-25 minutes. This batter is enough for exactly 12 cupcakes.

                                                           CREAM CHEESE MAPLE FROSTING

INGREDIENTS:

  • 8 OZ. CREAM CHEESE ROOM TEMPERATURE
  • 1 STICK UNSALTED BUTTER
  • 1 TABLESPOON PURE MAPLE SYRUP
  • 1/2 TEASPOON VANILLA
  • 2 CUPS CONFECTIONERS SUGAR

PREPARATION:

-Mix all the ingredients one by one with a hand mixer. Frost your cupcakes.

Great Gatsby Cake and Big Flower Tutorial

Hello everybody!!

I still don’t know the first person who after having seen the Great Gatsby movie was not impressed with the style that characterized the 20’s.

Apart from the majestic Art Deco style that was born with the 20’s, what most caught my attention was the fashion, where colors like black and gold, long pearl necklaces and large flowers were the distinctive elements of the glamour that predominated at the time, that are also perfect details to be reflected in a cake.

When I had the opportunity to make a Great Gatsby cake for a birthday party, these details were basic for this wonderful theme, also I took the time to do an easy tutorial about how to make a big flower, which can be used in any occasion to enhance your cake with an exquisite and elegant touch..but before the tutorial some details about this cake:

  • It was a two tier 6″ and 8″ cake, both of them vanilla cake with Dulce de Leche filling and buttercream icing.
  • The cake was covered and decorated with homemade marshmallows fondant except for the black fondant which was prefabricated.
  • For the golden details I used homemade marshmallows fondant colored first in yellow and then painted gold with this spray.
  • To make the number 30 cake topper I used this cookie cutter set.
  • To make the borders and the necklace I used this silicone mold (one of my favorites and most used).

                                                                        BIG FLOWER TUTORIAL

  • Place the flowers in a flower foam and using a ball tool smooth the edges to achieve a natural look of the petals.

  • Stick the flowers to each other with water from largest to smallest order and let it dry on a flower shaping bowl or on any curved surface , for the center of the flower make a little fondant ball, flatten it and stick it to the center of the flower.

Here is a close-up of this extremely beautiful flower placed on the cake:

The cake was a great success and I guess that it was largely because of the elegant big flower detail in the decoration..please do this flower, you will see that it is very easy to make and the result is simply beautiful!!
